I was thrilled when ‘Company’s Coming diabetic cooking’ was published in 2001. Until then finding delicious recipes for my who had Type 2 Diabetes was nearly impossible. Any recipes I did find before that tasted like cardboard. Let me tell you about this fabulous cookbook.

Company’s Coming diabetic cooking, product overview

When my mother was diagnosed with Type 2 Diabetes (25 years ago) there weren’t many recipes available for diabetics.

We were ecstatic when Jean Pare came out with this “Company’s Coming diabetic cooking” cookbook.

My mother and I enjoyed all the Company’s Coming collection so it was obvious we would each buy a copy.

I wasn’t diabetic but on the occasions that my mother visited I wanted to feed her diabetic-friendly food.

I was excited to try my very first recipe and discovered it was tasty enough for all of us to eat, that was an unexpected yet welcome bonus.

After my mother passed away I had stuffed that cookbook in the back of a shelf and forgot about it.

When my grandson was diagnosed with Type 1 Diabetes last June I dug out that cookbook as well as finding new ones.

These recipes are just as good as I remembered.

What It Contains

This cookbook contains fabulous recipes for every occasion.

It covers everything from:

  • breakfast ideas
  • lunches
  • main dishes
  • soups
  • side dishes
  • bread and muffins
  • desserts.

It even includes some recipes for boosters( fast-acting sugary snacks used to treat lows).

Every recipe includes complete nutrition information so calculating carbs will be easier.

There are even measurement tables included and every recipe includes both standard and metric measures to make it convenient for anyone, anywhere to use.

Great-Tasting Recipes

Did I mention how great the recipes are? Here try this dessert recipe. The whole family loves this one. My son-in-law loved it so much that on his birthday he wanted this dessert instead of a cake. This recipe contains 24 g carbohydrate and 1 g fiber. You will find the rest of the nutrition info for this recipe on page 62 of ‘Company’s Coming diabetic cooking’.

Chocolate Eclair Dessert

Cocoa 1/3 cup 75 ml

Cornstarch 2 tbsp. 30 ml

All-purpose flour 2 tbsp. 30 ml

Granulated sugar 1/2 cup 125 ml

Salt 1/8tsp 0.5 ml

Ground Cinnamon 1/8 tsp 0.5 ml

Skim Milk 1 cup 250 ml

Can of skim evaporated milk 13 1/2 oz. 385 ml

Frozen egg product, thawed (see Note) 1/2 cup 125 ml

Vanilla 1 tsp 5 ml

Light liquid topping (Nutriwhip) 1 cup 250 ml

cocoa, sifted 1 tbsp 15 ml

Whole graham crackers 28 28

Cocoa, sifted, for garnish 1 tsp 5 ml

Combine the first amount of cocoa, cornstarch, flour, sugar, salt, and cinnamon in a medium saucepan. Slowly whisk in both kinds of milk until smooth. Heat and stir on medium until boiling and thickened. Remove from heat.

Add two large spoonfuls of hot pudding into egg product in a small bowl. Mix well. Whisk into cocoa mixture until smooth. Heat for 2 minutes. Stir in vanilla. Cover with plastic wrap directly on the surface to prevent skin from forming. Let stand until cooled to room temperature.

Beat topping with the second amount of cocoa in a medium bowl until stiff.

Arrange 1/2 of graham crackers in a single layer in a 9 x 9(22 x22 cm)pan. Cut to fit if necessary. Whisk pudding to make smooth. Spread 1/2 of pudding mixture on crackers and spread evenly. Spread 1/2 of the whipped topping mixture on pudding. Cover with a single layer of remaining crackers, remaining pudding, and topping. Cover with plastic wrap for 24 hours to allow crackers to soften completely.

Just before serving, sift cocoa over top. For a more decorative look, place doily over the top of the dessert, then sift with cocoa. Carefully lift and remove doily and excess cocoa. Cuts into 16 pieces.

Note: 4 tbsp frozen egg products = 1 large egg

Conclusion

I absolutely love this cookbook. My only regret is having put it away for so long.

The recipes are easy to follow and so delicious the whole family will love eating them. They won’t even realize they are eating healthy.

There is such a wide variety of tastes, textures, and colors it is wonderful. You can put together an entire meal fit for the company by just using this cookbook.

The best part is that if one of those guests happens to be Diabetic they will be able to safely eat every part of that meal.

Since the book offers all the necessary nutrition information about every recipe it will be easy to count carbs for correct insulin dosage.

In my opinion, it can’t get any easier.

      I realize the recipes in this cookbook are for diabetics but really they are great healthy recipes for anyone.

      We definitely benefit from eating healthier.

      Just made that dessert again today so we can have it tomorrow. Hardest part is waiting to eat it.

      So glad I was able to help.
      This is my one of my favourite cookbooks now.
      I find I use even when my grandson isn’t here.
      Also I found another great cookbook called “The Ultimate Diabetic Cookbook” which I also did a review on.
      I find it gets kind of boring eating the same food all the time and dietary restrictions just make that worse.
